Boston Baked Beans

Step 1
12 lb white beans
Boil the beans in light salted water for 10min.
Step 2
2 lb bacon or salt pork • diced
2 cup onions • diced
Then saute bacon and onion in bacon fat.
Step 3
1 lb brown sugar
1 pt malt vinegar or cider
4 cup molasses
1/2 gal ketchup
1 qt malt syrup
1 1/2 gal white beans cooking liquid
dry mustard to taste
salt and pepper to taste
Add brown sugar and malt vinegar, cook slowly then add the remaining ingredients. Bring to a boil then add the beans. Cook in 325F oven for 6-8 hours.
