Silky smooth classic Mother Sauce

Step 1
3 oz onion • fn dc
2 oz butter
Sweat together
Step 2
10 oz white roux • warm
1 g milk • scald
pinch nutmeg
1/4 tbsp white pepper
1 each bay leaf
Mix roux, milk, onions & spices, bring quickly to simmer, skimming & stirring frequently. Cook for 30 minutes, strain.
