Silky smooth classic Mother Sauce

Step 1
3 oz Onion • fn dc
2 oz Butter
Sweat together
Step 2
10 oz White Roux • warm
1 g Milk • scald
pinch Nutmeg
1/4 tbsp White Pepper
1 each Bay Leaf
Mix roux, milk, onions & spices, bring quickly to simmer, skimming & stirring frequently. Cook for 30 minutes, strain.
