Step 1
1 each Eggplant-medium • approx. 1lb
Char the skin of the eggplant until flesh is soft. When cool, peel, remove seeds and puree.
Step 2
.25 cup Lemon juice
.25 cup Tahini
1 each Garlic clove
1 tsp Salt
1 tsp Olive oil
Puree lemon juice, tahini, garlic, salt, and olive oil together with eggplant.
Step 3
.5 cup Parsley • chopped
Tabasco to taste
Fold parsley and Tabasco into eggplant mixture.
