Confetti Cornbread

Step 1
1 cup • Yellow cornmeal
1 cup • AP flour
3 tsp • Baking powder
Salt to taste
1 cup • Milk
1 each • Egg
1/4 cup • Butter - melted
1 cup • Corn kernels-fresh
1/3 cup • Red/green bell pepper • chopped
1/2 cup • Pepper-jack cheese • grated
Preheat oven at 350 degrees. Grease and 8" baking dish. In a large bowl sift together cornmeal, flour, baking powder, and salt. In another bowl beat together milk, egg, melted butter, corn, peppers, and cheese. Stir into dry mixture until barely incorporated. Bake for 25 minutes or until tester comes out clean.
