Smoked Salmon and Potato Cakes with Dill

Step 1
3 each • Idaho potatoes, large • Peeled & sliced 1/4 inch
1 qt • Milk
3 tbsp • Olive oil
1 qt • Water
Boil potatoes in liquid and oil until soft.

Pass through a ricer 2 times. Use in mixture.
Step 2
1 tsp • Olive oil
3 each • Scallions-thinly sliced
Saute scallions and cool.
Step 3
2 each • Eggs
6 oz • Smoked salmon • minced
.5 cup • Dill • chopped
1 tbsp • Lemon juice, fresh
1 tbsp • Low-fat yogurt
Salt and Pepper to taste
Tabasco to taste
Mix together, add the mashed potatoes and cooled scallions. Mold mixture into patties. Heat olive oil in pan and cook until evenly browned on each side.
Step 4
1 cup • Dill Cream
.25 cup • Balsamic vinegar
2 tbsp • Low-fat yogurt
Sauce: Combine and serve as a sauce with Salmon Cakes.
