Sherry Walnut Vinaigrette

Step 1
• Shallots • choppped
1/4 cup • Sugar
Saute Shallots in 1 tbl of olive oil. Add Sugar - invert.
Step 2
1 cup • Sherry Vinegar
Add - bring to a boil - reduce by 1/3.
Step 3
1 cup • Sherry
Add and bring to a boil.
Step 4
1 whole • Lemon Juice
1 cup • Walnuts • toasted
Place in blender with lemon juice and nuts. Run until smooth.
Step 5
1/2 cup • Walnut Oil
1 cup • Olive oil
1 tsp • Salt
1/2 tsp • Black Pepper
1 tbsp • Tarragon
Add in oils and salt and pepper.
