Mediterranean Micro Cucumber Cup

Step 1
1 cup red & green vinegar peppers • fine cut
1 cup pepperoncini pepper • fine cut
1 cup tomato - no seeds • fine cut
1/2 cup calamata olives • fine cut
1/2 cup green olives • fine cut
2 tbsp good olive oil
8 oz feta cheese • fine shredded
3 each micro cucumbers
 black pepper
Cut cucumber cup 3/4 inch thick and hollow out with mellon baller, leaving bottom intact.

Mix peppers, tomato, olives together in bowl, add in oil.

Sprinkle with black pepper, fill in cucumber cups and cover with shredded Feta Cheese.
