4 cup carrots • grated
3/4 cup brown sugar
1/2 cup salad oil
1 whole eggs - large
2 egg whites
Mix ingredients well.
Step 2
1 cup whole wheat flour
1 1/2 cup white flour -- unbleached
4 tsp cinnamon
2 tsp nutmeg
1 tsp allspice
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup raisins
Sift all dry ingredients and stir into step one to incorporate.

put into 10" round cake pans and bake at 350 f until firm to touch.


Spoon mixture onto a medium hot griddle and cook as pancakes.
