Gazpacho

Step 1
3 each red and green peppers, medium
1 european cucumber
1 red onion, small
1 clove garlic • fine chop
6 tomatoes
Seed peppers. Peel and seed cucumbers. Cut vegetables into brunoise cut.
Step 2
40 oz v-8 juice
40 oz tomato juice
1 1/2 oz white vinegar
tabasco to taste
1 bunch fresh basil • chopped
1/2 tsp cumin
Combine vegetables with juices, vinegar, fresh basil and seasonings. Chill.
Step 3
 corn husk
 fresh basil leaves
3 oz black bean relish
 parsley - fresh • chopped
At service, portion 8 oz. into large bowl. Garnish with corn husk filled with black bean relish and a fresh basil leaf. Sprinkle the entire bowl with chopped parsley.
