Spiced Pear Sauce

3 each • Pears, Bosc or Anjou • peeled and cored
1/2 cup • Apple Juice
1/2 each • Vanilla Bean • Split in half lengthwise
1/2 tsp • Cinnamon
1/2 tsp • Cardamom
1 tsp • Lemon juice
Cut pears into quarters. Place pears in a sauce pan, cover with apple juice and add vanilla bean. Cover and simmer over medium heat until pears are tender, approximately 15 minutes.

Add in remaining ingredients and simmer 10 more minutes. Take off heat, remove vanilla bean, scrape vanilla seeds from inside gently and put into pear mixture.

Press pears through a colander or run through a food mill to make into a sauce - reserve.

Great Tip - Can be made in a large batch and used as a snack - mix with some non-fat yogurt. Great as a baby food or a cereal topping or even dessert on top of some non-fat frozen yogurt.

Same method can be used with a cooking apple.
