|3 each pears, bosc or anjou • peeled and cored|
|1/2 cup apple juice|
|1/2 each vanilla bean • split in half lengthwise|
|1/2 tsp cinnamon|
|1/2 tsp cardamom|
|1 tsp lemon juice|
Cut pears into quarters. Place pears in a sauce pan, cover with apple juice and add vanilla bean. Cover and simmer over medium heat until pears are tender, approximately 15 minutes.
Add in remaining ingredients and simmer 10 more minutes. Take off heat, remove vanilla bean, scrape vanilla seeds from inside gently and put into pear mixture.
Press pears through a colander or run through a food mill to make into a sauce - reserve.
