Coconut Macaroons

Step 1
1/2 cup egg whites
2 tsp lemon juice
1 cup sugar
pinch salt
Whip whites on medium speed with juice & salt, until beginning to firm. Increase speed to max and add sugar slowly until whites are firm.
Step 2
2 cup coconut
1 tsp vanilla extract
Gently fold in the coconut and vanilla, spoon onto pans, bake at 325 F until gold and still soft in the middle.
