Step 1
6 oz • Kosher salt
10 oz • Sugar
1 tsp • Black pepper • Ground
1 tsp • Juniper berry • Toasted
4 piece • Star anise • Toasted
Mix all well and allow the mix to sit for one week.
Notes
This mix is used to coat meats and achieve a cured protein. The ratio of salt to sugar can be adjusted as a different sweetness or saltiness is needed. The seasonings may also be changed for various flavor profiles.
