Step 1
6 oz kosher salt
10 oz sugar
1 tsp black pepper • ground
1 tsp juniper berry • toasted
4 piece star anise • toasted
Mix all well and allow the mix to sit for one week.
This mix is used to coat meats and achieve a cured protein. The ratio of salt to sugar can be adjusted as a different sweetness or saltiness is needed. The seasonings may also be changed for various flavor profiles.
