Pickled Onions and Corn

Step 1
10 each corn on the cob • roasted and cleaned
1 lb red onions • thin sliced
Scrape the roasted corn and add it to the onions.
Step 2
1 tsp kosher salt
1 cup red wine vinegar
1 cup red wine
1/2 cup white sugar
2 each fresh bay leaves
12 each black peppercorns
kosher salt to taste
black pepper to taste
Bring the rest of the ingredients up to a boil and then strain onto the corn and onions.

Marinate overnight in the refrigerator and then strain off the excess liquid.
