Pickled Onions and Corn

Step 1
10 each • Corn on the Cob • roasted and cleaned
1 lb • Red onions • thin sliced
Scrape the roasted corn and add it to the onions.
Step 2
1 tsp • Kosher salt
1 cup • Red wine vinegar
1 cup • Red wine
1/2 cup • White sugar
2 each • Fresh bay leaves
12 each • Black peppercorns
Kosher salt to taste
Black pepper to taste
Bring the rest of the ingredients up to a boil and then strain onto the corn and onions.

Marinate overnight in the refrigerator and then strain off the excess liquid.
