Southwestern Baked Beans

Step 1
1 can Pinto Beans #10 CAN • drain,reserve liquid
1 qt Onions • small dice
20 piece Bacon • small dice
2 tbsp Oregano • chopped
2 whole Jalapenos • small dice
1/2 cup Cider vinegar
2 tbsp Ground Cumin
1 cup Brown sugar
1.5 pt Hickory BBQ Sauce
1/4 cup Chopped garlic
2 tbsp Chipotle Paste
Chopped Cilantro & Tomato
Place Rondeu on medium heat and render bacon until crispy.

Remove with slotted spoon, saving fat in the pan. Return to heat.

Saute onions, garlic, and jalepenos till onons are translucent.

Deglaze with cider vinegar, add beans, 1/2 the liquid and the remaining ingredients.

Bring up tp slow simmer and shut off heat. Let cool.
