Potato and Leek Soup

Step 1
Nonstick cooking spray
5 oz Leeks • chopped
4 oz Onions • chopped
20 oz Potato • diced
Spray a large pot with nonstick cooking spray. Add leeks and onions, and sweat until transparent. Add potato. Sauté a few minutes, being careful not to color.
Step 2
28 oz Chicken stock • defatted
40 oz Skim milk
White pepper to taste
Tabasco to taste
Add chicken stock, skim milk, and seasonings. Boil till vegetables soften. Put in blender, and purée till smooth. Chill.
Step 3
1 oz Cucumber • diced
fresh parsley • chopped
At service, portion into large bowl. Garnish with diced cucumber and chopped parsley on top.
