Step 1
2 cup lima beans • fresh, shelled
1 salt pork - small piece or 1 slice of bacon
1/2 cup chicken stock
2.5 cup fresh sweet corn kernels
1/2 tsp thyme leaves
1/2 tsp black pepper
kosher salt to taste
1/3 cup heavy cream
Combine lima beans, salt pork or bacon and stock in a sauce pan. COver partially and heat to a boil. Cook until lima beans are ala dente, approx. 8 minutes. Add corn and seasonings and cook until corn is tender 3-4 minutes. Stir in cream and simmer to thicken slightly.
