|1 lb ground beef chuck|
|1/2 lb ground pork butt|
|1/2 lb ground veal|
|4 tbsp olive oil|
|1 whole onion-medium • minced|
|2 whole garlic cloves • minced|
|5 slice white bread • crust removed&diced|
|1/2 cup cream|
|2 tbsp worcestershire sauce|
|1/3 cup fresh bread crumbs|
|1/2 cup parsley • chopped|
|0 as needed kosher salt and pepper|
|3 whole eggs|
|1 cup quality ketchup|
|16 slice bacon|
Place meat in a large bowl and mix well, form a well in the center.
In a small pan add oil and bring to medium high heat. Add onions and garlic, cook until soft. Remove from the heat and add diced bread, cover with cream and worcestershire, let sit 15 minutes.
Add all items to the well except 1/3 of the cup of ketchup and mix well until everything is incorporated.
Form mixture into two loafs and place on baking trays. Brush on the remaining ketchup over the loaves.
Wrap each loaf with strips of bacon, bake in a 350F oven until nicely browned and cooked all the way through about 30 minutes.
