Roasted Tomato Balsamic Dip

Step 1
5 lb plum tomatoes
1 cup roasted garlic • chopped
10 clove garlic - whole
1 cup extra-virgin olive oil
1/2 cup balsamic vinegar
1 tbsp lemon juice
2 tbsp parsley • chopped
1 tbsp oregano • chopped
salt & pepper to taste
Roast tomatoes and whole garlic with a little olive oil, salt and pepper in the oven until tender. Mix with other ingredients in robot coupe together.
