Biga - Pre Ferment / Starter

6.5 lb • Liquid*
1 oz • Yeast - fresh
7 lb • Grains**
Mix all and let stand in a warm area, usually 76 - 86 f.

The warmer the area the faster the fermentation will take place. This biga must be fed the liquid and grain each time some is used in the same quantity which is removed

The ratio is liquid 48%, grain 52%.

*The liquid may be beer or water.

**The grain can be any milled grain, such as wheat, barley, rice, spelt or otherwise.

Properly cared for the Biga will last for some time and can become extremely tasty over time.
