Honey Dijon Pork Sauce

Step 1
4 oz Butter • browned
2 cup Onion • medium diced
1.5 cup Carrot • medium diced
1.5 cup Celery • medium diced
3 oz Garlic • chopped
3 oz Shallot • chopped
6 tbsp Tomato paste
Cook onions and carrots in brown butter. Add celery and cook 3 minutes. Add garlic and shallots and cook for an additional 3 minutes. Stir in tomato paste and cook until browned.
Step 2
2 qt Pork stock
2 qt Chicken stock
2 qt Brown veal stock
6-8 oz Brown roux
Add all stock to vegetable mixture and simmer until reduced by 1/2. Add brown roux and simmer for an additional 10 minutes.
Step 3
6 oz Dijon mustard
2 oz Honey
2 oz Sherry Vinegar
Add all to finish, simmer 5 minutes blend & strain
