Lobster Wild Mushroom Mac & Cheese

Step 1
5 oz Wild Mushrooms • cooked
1/2 lb Lobster Meat • cooked
1 tbsp Shallots
2 tbsp Butter
Salt and Pepper to taste
1 tsp Fresh Thyme
1 tbsp Chives • chopped fine
Melt butter, saute mushrooms and shallots over high heat. Add in lobster meat and thyme. Cook for 1 minute on low flame, take off heat and add chives. Reserve for next step.
Step 2
1/2 lb Ditalini/Elbows • cooked
1 qt Homemade or Canned Cheese Sauce
1 cup Aged Colby Cheddar Cheese • shredded
1/2 pt Parmesan Crumbs
Mix pasta with cheese sauce, reserve on side. In 8x8 pan, make a layer of pasta, then a layer of lobster and mushrooms, then a sprinkle of colby cheese-repeat again, only add extra pasta layer. Finish with seasoned Parmesan Crumbs. Bake at 350F for 25 minutes. Top with pats of butter on crumbs to keep moist. Serve with your favorite meat, poultry or vegetable.
