Pineapple Upside-Down Cake

Step 1
8 lb 2 oz almond paste
8 lb 2 oz sugar
8 lb 2 oz butter
Cream until light and fluffy.
Step 2
90 eggs
Add slowly.
Step 3
3 lb 12 oz cake flour
Fold into mixture.
Step 4
5 lb 8 oz pineapple • small dice
2 lb butter - melted
 sugar
In the intended pans distribute the pineapple, butter and sugar.

Put into a 350F oven and roast to caramelize the butter and sugar just golden. Chill the pans.

Pour the cake batter over the pineapple and bake 350F till golden.
