Mole Poblano

Step 1
4 oz olive oil
1.5 cup onions • fine diced
6 each garlic cloves • mashed
1.5 cup green peppers • finely chopped
10 each jalapeño peppers • finely chopped
1 oz almonds • peeled and chopped
2 oz chili powder
1 tsp anise seeds
1 tbsp ginger root-grated
.5 tsp cinnamon
.5 tsp thyme - dried
2 cup tomato concassé
Brown onions, add garlic, peppers, almonds and saute for 3-4 minutes. Add seasonings, cook for 30 minutes and add tomato concasse.
Step 2
2 cup chicken stock
4 tbsp peanut butter
6 oz mexican unsweetened chocolate
2 tbsp sesame seeds - toasted
Deglaze with stock and add peanut butter, chocolate and sesame, allow to cool, puree and strain.
Step 4
mexican chocolate to taste
salt to taste
2 tbsp sesame seeds - toasted
