|7 lb firm fresh peaches|
|1 pt cider vinegar|
|2 lb dark brown sugar|
|1/2 cup grated onion|
|2 lb raisins|
|5 whole apples • peeled and diced|
|2 tbsp white mustard seed|
|1/4 cup ginger root • or 3 tbsp of|
|1.5 tbsp salt|
|2 tbsp paprika|
|1 tbsp cumin|
| grated rind and juice of 2 lemons|
Peel and cut peaches in slices 3/4 inch thick. Cover with vinegar and brown sugar. Set aside.
Combine all remaining ingredients and cook over low heat, stirring constantly until the mixture is thoroughly blended.
In a separate sauce pan, cook the peach mixture for several minutes until the peaches are tender but not mushy.
Combine both mixtures and cook together for 5 minutes. Pour into sterilized jars and seal.
