Peach Chutney

7 lb • Firm fresh peaches
1 pt • Cider vinegar
2 lb • Dark brown sugar
1/2 cup • Grated onion
2 lb • Raisins
5 whole • Apples • peeled and diced
2 tbsp • white mustard seed
1/4 cup • Ginger root • or 3 tbsp of
1.5 tbsp • Salt
2 tbsp • Paprika
1 tbsp • cumin
• Grated rind and juice of 2 lemons
Peel and cut peaches in slices 3/4 inch thick. Cover with vinegar and brown sugar. Set aside.

Combine all remaining ingredients and cook over low heat, stirring constantly until the mixture is thoroughly blended.

In a separate sauce pan, cook the peach mixture for several minutes until the peaches are tender but not mushy.

Combine both mixtures and cook together for 5 minutes. Pour into sterilized jars and seal.
